Cook bacon over medium heat until crisp. Add onion, green pepper, and celery to bacon and cook until starting to brown about 5 minutes. Add garlic and cook until fragrant about 30 seconds. Add chicken stock, peas, bay leaf, salt, and crushed red pepper to pot and bring to a boil. Reduce heat and simmer for 1 to 2 hours or until peas are tender but not mushy. Serve over rice and sprinkled with green onions. Makes 6 servings. |
