Heat large frying pan to medium. Add oil and heat until shimmering. Add potatoes and cook stirring to cook on all sides until browned about 8 to 10 minutes. Add ham and cook for one minute. Add eggs and scramble until cooked until you like them. Add Cajun spice and cheese and mix until cheese melts and spice coats everything. Makes 2 servings. |
