Heat oil in heavy pot or Dutch oven to 350°F. Season shrimp with salt and pepper and let set at room temperature for 10 to 15 minutes. In a small bowl mix buttermilk, mustard, egg, cornmeal, flour, baking powder, and Cajun spice together. Mix well so that no lumps form. Add shrimp to batter mixture and stir to make sure the shrimp is coated well. Drop shrimp in batches into hot oil and cook 2 to 4 minutes or until golden brown. Place shrimp on paper towel lined plate as they are brought out of the oil. Makes 8 servings. |
