Heat oil in heavy Dutch over or pot to 365°F. Mix Old Bay, salt, pepper, garlic powder, and cayenne together. Rub over both sides of fish until coated evenly. Dip fish in buttermilk and let excess drip off. Mix cornmeal and flour together. Dredge fish in flour mixture. Place fish on rack over a roasting pan and let sit 15 minutes for coating to firm up. Fry fish for 2 to 3 minutes per side or until golden brown. Makes 4 servings. |
