Oven Barbecued Chicken

  chicken breast without skin

  unsalted butter

  basic barbecue sauce -- see recipe

Brine the chicken for 1 hour.

Heat oven to 350°F.

Remove chicken from brine and pat dry.

Melt butter in heavy skillet over medium heat. Brown the chicken on both sides. Place in a glass or nonreactive pan.

Bake for 20 minutes.

Brush sauce over chicken. Bake for 15 to 20 minutes brushing sauce every 5 minutes until chicken is cooked through.


Notes: To brine the chicken mix 1/4 cup kosher salt or 1/8 cup table salt in 1 quart of water. Place the chicken in brine and cover and refrigerate.
