Heat oil in frying pan over medium heat. Add potatoes and spread into an even layer. Cover and cook for 3 minutes or until browned on one side. Turn over potatoes and add corned beef. Cook uncovered for another three minutes or until potatoes are browned. Add mustard, salt, and pepper and stir to combine. Makes 8 servings. |
