Potatoes O'Brien

  Yukon Gold potatoes or small red potatoes cubed

  red bell pepper -- diced

  sweet onion -- diced

  olive oil

  unsalted butter

  seasoned salt

  seasoned pepper

Boil potatoes for 10 minutes. Drain.

Add oil and butter to large skillet. Add onion and peppers and cook until starting to brown.

Add potatoes and cook until potatoes are browned and peppers softened.

Season with salt and pepper.
