Cajun Sausage and Potatoes - Vegetarian

  Morning Star Sausage Links -- sliced

  unsalted butter -- divided

  boiling water

Add potatoes to boiling water and cook for 8 minutes.

While potatoes are cooking add 2 tablespoons butter to large frying pan. Add the onions and cook until they start to brown.
Drain potatoes. Add remaining 2 tablespoons of butter to frying pan. Add potatoes and cook for 3 to 5 minutes and potatoes are starting to brown.

Add sausage and Cajun spice mix to potatoes and onions. Mix thoroughly. Cook until sausage is heated through.
Makes 6 servings.
