Cajun Red Snapper

 red snapper -- 4 fillets



 Cajun seasoning -- see recipe



 unsalted butter

Pat spice mixture on both sides of fish.

Heat butter over medium and cook fish on both sides until fish is opaque and flakes easily.

Notes: This dish can be made two different way. In blacked snapper cook until the spices turn black. It will not taste burnt.
You can also cook the fish until it turns golden.

Makes 4 servings.
