Cajun Pork and Rice

Drain the tomatoes reserving liquid. Add enough water to make two cups. Boil the rice in the tomato juice mixture.

Heat olive oil in a large skillet over medium heat. Add pork and cook until browned.

Add tomatoes, pimentos, corn, green chilies, tomato sauce, salt, and Cajun spice and heat through.

Add cooked rice and mix well.
