Cajun Dirty Rice

  low sodium Worcestershire sauce

  low sodium chicken broth

  andouille sausage -- sliced

  long-grain rice

Melt butter in large skillet. Add sausage, onion, garlic, and celery. Cook until sausage is browned.

Add tomato paste and Cajun seasoning. Cook for one minute.

Add chicken stock and rice. Heat to boiling.

Reduce heat and simmer for 30 minutes or until rice is cooked through.

Notes: Traditional dirty rice is made using chicken livers. Because of health considerations I needed to do it without the liver.
