Rice Pudding with Caramelized Bananas

1   cup   instant rice
1   cup   2% low-fat milk
2   tablespoons   sugar
1/2   teaspoon   cinnamon
1/4   teaspoon   nutmeg
1/4   cup   maple syrup
4   tablespoons   unsalted butter
1/4   cup   dark brown sugar
3   whole   bananas -- sliced
Heat milk to boiling. Add rice and cover and move off heat for 5 minutes.

Melt butter in frying pan. Add brown sugar and mix until sugar dissolves.

Add sliced bananas to butter mixture and cook on medium for 5 to 10 minutes or until soft.

Add maple syrup, sugar, cinnamon, nutmeg, bananas and their syrup to rice mixture. Mix well.
