Fried Green Tomatoes



 Ingredient -- Preparation Method






 green tomatoes -- sliced 1/4 inch thick



 all-purpose flour



 Cajun spice mix -- see recipe



 low fat buttermilk







 kosher salt

 vegetable oil

Put tomato slices on a rack set over paper towels. Sprinkle with kosher salt and let set for 15 minutes to draw moisture out. 

Place slices on clean paper towel and put more over tomatoes and press to get out more moisture.

Heat 1/4 to 1/2 inch of oil to 360F to 375F.

Mix flour with Cajun seasoning in one bowl.

Place buttermilk in second bowl.

Mix cornmeal and panko in third bowl.

One at a time place tomato slices in flour mixture. Shake off excess flour.

Place in buttermilk and let excess drip off.

Coat in cornmeal mixture.

Fry in batches for 3 to 5 minutes on each side. Let drain on paper towels.

Makes 6 servings.
