Easy Vanilla Pudding

2   cups   2% low-fat milk
1/2   cup   sugar
3   tablespoons   cornstarch
1/4   teaspoon   salt
1   teaspoon   vanilla extract -- pure not artificial
1   tablespoon   butter
In a small bowl combine sugar, cornstarch, and salt. Mix thoroughly.

Heat milk in medium saucepan over medium heat until bubbles start to form around edges. Slowly add dry mixture stirring to incorporate.

Continue to cook until mixture is thick enough to coat back of spoon. Stir constantly to keep from burning. Do not let boil.

Remove from heat and add vanilla extract and butter.

Pour into serving dishes. Chill before serving.
