Curried Potatoes and Onions

 Yukon Gold potatoes -- cubed



 onion -- diced



 garlic -- minced



 unsalted butter

 homemade curry powder (see recipe) or store bought

Boil potatoes for 10 minutes or until starting to get tender.

Heat butter in large skillet. Add onions and cook until starting to brown.

Add garlic and curry powder and cook for 30 seconds.

Add potatoes and mix thoroughly. Cook until potatoes brown on all sides about 5 to 10 minutes.

Makes 6 servings.
