Peel plantains and slice into rounds. Melt 3 tablespoons butter on medium low. Add plantains and cook until golden on the bottom. Flip plantains over and add cinnamon, nutmeg, vanilla, and brown sugar. Cook until golden on bottom and sugar starts to caramelize. Add remaining tablespoon of butter off heat to finish the sauce. NOTES : When fully ripe the plantains will be black. |
