Stuffed Baby Potatoes

  Yukon Gold potatoes

  light sour cream

  bacon pieces -- reduced fat

  chives -- minced

  cheddar cheese -- low sodium -- shredded


Boil potatoes until tender.

Cut potatoes in half and scoop out centers.

In small bowl mix potato centers, sour cream, bacon, salt, chives, and cheese. Beat until combined.

Fill hallowed out potatoes with mixture.
