Streusel Puffs

2 1/2  cups  all-purpose flour
1/4  cup  brown sugar -- packed
1/2  cup  butter
1/2  cup  granulated sugar
2  teaspoons  baking powder
1  teaspoon  salt
1  large  egg
3/4  cup  2% low-fat milk
1/4  cup  marmalade or other jam or jelly
vegetable cooking spray
Heat oven to 400°F.

Mix 1/2 cup flour and brown sugar in a small bowl. Cut in 2 tablespoons butter. Nix until the flour and brown sugar a well mixed to the consistency of rough sand.

Sift 2 cups of flour, sugar, baking power, and salt.

Cut remaining butter into the mixture.

Combine egg and milk in a small bowl. Add all at once to the dry mixture. Batter will be lumpy.

Spoon 1 heaping tablespoon batter into each cup of muffin tin.

Top center of each cup with 1 teaspoon of marmalade.

Spoon remaining batter evenly of the cups.

Bake for 25 minutes or until golden.
