Southern Pralines

1   cup   granulated sugar
1   cup   packed dark brown sugar
1/2   cup  low fat evaporated milk
3   tablespoons   unsalted butter
1/8   teaspoon   salt
1   teaspoon   vanilla extract
1 1/2   cups   pecans -- chopped
  vegetable cooking spray
Line a baking sheet with waxed paper or parchment paper. Spray with cooking spray.

In a large saucepan combine the sugar, brown sugar, and milk over medium heat. Stir until sugars dissolve.

Insert a candy thermometer and cook until candy reaches 240°F. Stir occasionally.

Remove pan from heat and drop butter over top. Let heat melt butter.

After about one minute stir in salt, pecans, and vanilla extract. Stir with a wooden spoon until the candy gets thicker and lighter in color and starts to hold its shape.

Quickly drop by teaspoonfuls onto prepared pans. If the candy hardens too much to drop add a spoonful of very hot water and stir until it loosens.

Let candy set for at least 30 minutes.
