Scottish Shortbread

1  cup  unsalted butter -- softened
1/4  cup  packed brown sugar
2  cups  all-purpose flour
1/8  teaspoon  salt
Heat oven to 325°F.

Cream butter and sugar together until light and fluffy.

Add flour and stir until combined. Turn onto floured board and knead gently for about five minutes.

Roll dough to 1/2 inch thick. Cut into rectangles. Prick with a fork.

Bake on ungreased cookie sheet for 20 to 25 minutes.
