Scalloped Potatoes and Ham

  Yukon Gold potatoes -- sliced thin

  low sodium cheddar cheese -- shredded

Heat oven to 350°F. Butter a 2 quart casserole dish or 13x9x2 pan.

Melt butter in saucepan over low heat and add flour. Cook about 1 minute. Add salt, pepper, Dijon, and shallot. Cook 30 seconds more. Remove from heat.

Gradually stir in milk off heat until sauce is free from lumps.

Return sauce to heat medium. Cook stirring constantly until sauce thickens and is smooth.

Layer 1/2 potatoes in dish, top with 1/2 ham, 1/2 cheese, and 1/2 sauce. Repeat layers

Cover and bake for 40 minutes.

Uncover and bake 40 minutes more or until cooked through and brown and bubbly.
