Peas with Cucumbers

  cucumber -- peeled and seeded

  unsalted butter

  ginger root -- minced fine

  garlic -- minced fine

  low sodium soy sauce

Melt butter in large skillet or wok over medium heat. Add ginger and garlic and cook for 30 seconds.

Add peas and cucumbers and cook for 5 minutes or until tender-crisp.

Add soy sauce and heat through.

Makes 6 servings.
