Parmesan Crusted Pork Chops

  pork center loin chops -- 3/4-inch thick

  panko

  Italian seasoning

  Dijon mustard

  Parmesan cheese -- grated

  olive oil

Mix egg, water, and Dijon in a plate.

Mix panko, Parmesan, and Italian seasoning in second plate.

Mix flour, salt, and pepper in third plate.

Dip chops in flour mixture patting off excess.

Dip pork chop in egg mixture and let excess drip off.

Place pork chop in bread and cheese mixture and press to adhere.

Place then pork chops on a rack as you do them.

Heat oil in large skillet over medium heat. Cook until golden on both sides and temperature reaches 145°F in center.

NOTES : It will taste much better if you buy Parmesan cheese and grate it yourself rather than use the already grated ones. They have extra chemicals in them that impart an off taste to your food.
