Orange Coconut Lace Cookies

1/2   cup   all-purpose flour
1/2   teaspoon   salt
2/3   cup   granulated sugar
1   cup   unsalted butter
2   large   eggs
1/2   teaspoon   vanilla extract
1/2   teaspoon   orange peel
1   cup   rolled oats
1/2   cup   coconut -- shredded
  vegetable cooking spray
Heat oven to 375°F. Grease cookie sheets.

Mix dry ingredients together.

Add butter, eggs, vanilla, and orange peel. Beat until smooth.

Fold in oats.

Drop by teaspoonfuls onto cookie sheet.

Flatten with a knife that has been dipped in cold water.

Sprinkle with coconut.

Bake for 10 to 12 minutes or until golden brown.
