Heat oven to 375°F. Grease cookie sheets. Mix dry ingredients together. Add butter, eggs, vanilla, and orange peel. Beat until smooth. Fold in oats. Drop by teaspoonfuls onto cookie sheet. Flatten with a knife that has been dipped in cold water. Sprinkle with coconut. Bake for 10 to 12 minutes or until golden brown. Makes 48 cookies |
