Heat oven to 375°F. Cream butter, sugar, and brown sugar and mix until fluffy. Add eggs and molasses and beat until smooth. Mix salt, cinnamon, ginger, cloves, nutmeg, and allspice until fully incorporated. Add flour gradually and mix until combined. Add mincemeat and stir until distributed evenly. Drop by tablespoons full onto greased cookie sheets and bake for 12 minutes. Remove to a rack to cool. Makes 72 cookies. |
