Lamb Chops with Fresh Mint Sauce

Mix garlic, 4 tablespoons olive oil, rosemary, and salt together. Rub on chops. Add remaining olive oil to pan and heat pan on medium-high. Cook chops for 2 minutes on first side. Flip and cook second side for 3 to 3 1/2 minutes. For sauce heat vinegar, water, and sugar and stir until sugar melts. Chop the mint leaves finely and pour vinegar mixture over. Let set for a few minutes to meld the flavors. Makes 4 servings. |
