  Italian seasoning

  dijon mustard

  garlic -- minced fine

 

Heat oven to 325²F.

Mix oil, seasoning, Dijon, and garlic together. Rub all over roast.

Place roast on a wire rack in roasting pan.

Roast for 20 to 22 minutes per pound or until internal temperature of 145°F for medium-rare.

Tent roast with foil for 15 to 20 minutes.
