Homemade Cheese Tortellini

Mix the eggs, water, and olive oil together. Mix the flour and salt together.

In a food processor place the flour and salt. Pulse a couple of times to mix.

Pour liquid in a steady stream and mix until the dough forms a ball and pulls away from the sides of the machine.

Form into a disc and cover with plastic wrap. Let rest in the refrigerator for 1 hour.

Heat water in a large pot or Dutch oven to boiling.

Combine the filling ingredients together.

Roll the dough until very thin. Using a 2 to 3 inch round cookie cutter cut the dough into circles.

Place 1/4 teaspoon of filling in center of each circle. Brush the bottom half of the circle with water and fold top over and seal well. Pull the bottom points over each other and press to seal.

Cook in batches for 3 to 5 minutes or until they float to the top.


Notes: You can make the dough by hand or in a stand mixture as well as by food processor. By hand mix together and knead for about 10 minutes. On stand mixer use the dough hook and follow your machines instructions.
