Fully Loaded Mashed Potatoes

 Yukon Gold potatoes -- peeled and cubed

 fat-free evaporated milk

 fat-free sour cream

 low-sodium cheddar cheese -- shredded

 green onions -- finely minced

 unsalted butter

 chives -- minced

 cup

 bacon pieces -- reduced fat

Heat large pan of water to boiling and add potatoes. Cook 20 to 25 minutes or until soft.

While potatoes are cooking add remaining ingredients to large bowl and mix well.

Add potatoes and mash with remaining ingredients until well combined.

Notes: I use a potato ricer now and it makes wonderfully soft and fluffy potatoes.

Makes 8 servings.
