Fruit Filling

Amount   Measure   Ingredient -- Preparation Method

1/2   cup   orange juice
3   tablespoons   sugar
1   tablespoon   cornstarch
1   cup   vanilla low fat yogurt
1   small   banana -- finely chopped
1/2   cup   mixed dried fruit
1/2   cup   sweet sherry
1   large   egg white
Soak the dried fruit in sherry until plump. Drain.

In a saucepan combine orange juice, 1 tablespoon sugar, and cornstarch. 

Cook and stir until bubbly. Remove from heat and let cool slightly.

Fold in yogurt, bananas, and fruit.

Chill 2 hours.

Beat egg white with remaining sugar until stiff peaks form. Fold into fruit mixture.
