In 2 quart saucepan combine sugar, corn syrup, and water. Heat until 260°F. Beat egg whites until stiff peaks form while heating the sugar mixture. Slowly add syrup mixture in a slow but steady stream to the egg white beating constantly until mixture starts to lose the glossy appearance. Add vanilla. Drop onto wax paper or parchment paper and let cool. Makes 40 candies |
