 vegetable cooking spray


Heat oven to 350°F.

Soak dates in boiling water until plumped up. Drain and let cool.

In large bowl cream together butter and sugar until light and fluffy.

Add milk, molasses, eggs, baking powder, baking soda, vanilla, salt, cinnamon, nutmeg, and nuts. Mix until well blended.

Add flour and mix just until moistened.

Fold in dates.

Spray 12 muffin tins or line with paper liners and divide batter between them.

Bake for 20 to 25 minutes or until toothpick inserted in middle comes out clean.

Notes: You can use pecans or any other nut you like in this recipe.
