Creamed Spinach

Melt butter in large skillet. Add shallots and cook until softened.

Add garlic and cook for 30 seconds.

Add spinach a handful at a time and cook until wilted. Add more spinach as previous batch wilts.

Add salt, pepper, nutmeg, and half-and-half. Mix thoroughly.

Cook until liquid reduced by half.

Makes 6 servings.
