Cranberry Orange Muffins

  cranberries -- fresh or frozen and thawed

  vegetable cooking spray


Heat oven to 400°F.

Mix butter, egg, orange zest, and orange juice together.

Mix flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and ginger together. Add cranberries.

Mix the wet ingredients into the dry ingredients just until moistened. Batter will be lumpy.

Spray muffin tins with cooking oil spray. Fill about 3/4 full.

Bake 18 to 20 minutes or until golden brown.
