Country Ham with Red Eye Gravy

  country ham -- 1/4-inch thick

  black coffee -- strong

  water

  unsalted butter

  light brown sugar

Soak the ham for 1/2 then dry off with paper towel. Make slits in fat about an inch apart to keep meat from curling up.

Heat butter in skillet and add ham. Cook until browned on both sides. Remove from skillet.

Pour off all but 2 tablespoons of fat. Add coffee and brown sugar scraping up browned bits.

Add water and bring to a boil. Let boil 3 to 5 minutes to reduce gravy.

Pour gravy over ham.


NOTES : Country ham is very salty. Soak in water for at least 1/2 hour to remove some of the salt. You can use regular ham if you don't want this much salt.
