Chinese Ham and Sweet Potatoes

sweet potatoes -- peeled and sliced thin

 fresh squeezed orange juice

 orange peel -- finely grated

 Dijon mustard

 low sodium soy sauce

 five-spice powder

Heat oven to 350ºF.

Peel and slice sweet potatoes.

Mix the orange juice, peel, mustard, brown sugar, soy sauce and five spice powder together in a measuring cup.

Put ham in the middle of a baking dish and layer sweet potatoes on the side of the ham. Pour sauce over ham and sweet potatoes. Cover tightly.

Bake 45 minutes.
