Chicken Kabobs

  skinless, boneless chicken breast -- cut into 1-inch cubes

  red onion -- quartered

  red bell pepper -- cut into 1-inch squares

  green bell pepper -- cut into 1-inch squares

  mushroom caps

  cup

  low sodium soy sauce

tablespoons

  honey

  teaspoon

  ground ginger

Mix the soy sauce, honey, and ginger together in a large Ziploc bag. Add chicken and toss to coat. Let marinate for at least 15 minutes.

On skewers place chicken, mushrooms, and peppers.

Either grill or broil until chicken is cooked through. About 15 minutes on the broiler. Turn to brown all sides.

Notes: If using wooden skewers be sure to soak them for at least 30 minutes. I prefer metal skewers.
