Brown Rice Pilaf

  green onions -- sliced

  long-grain brown rice

  unsalted butter

  clove garlic -- minced

  low sodium vegetable broth

  basil

Melt butter in saucepan or large skillet. Add green onions and cook until softened.

Add rice and cook until well coated with butter.

Add garlic and cook for 30 seconds or until fragrant.

Add broth and basil. Heat to boiling.

Reduce heat and cover and simmer for 35 to 40 minutes or until rice is tender. Fluff with fork.
