Bourbon Balls

1   cup   pecans -- finely chopped
1   cup   vanilla wafer crumbs
1/2   cup   unsweetened cocoa powder
1/2   cup   confectioner's sugar -- divided
1 1/2   tablespoons   light corn syrup
1/4   cup   bourbon
Heat oven to 325°F.

Spread pecans on a cookie sheet and place in oven about 3 minutes. Toss nuts a return for another 3 minutes. Be careful not to burn them.

In a food processor add cookies, pecans and process until finely chopped.

In a medium bowl mix together the nut and cookie mixture with 1/4 cup cocoa and 1/4 cup confectioner's sugar. Add corn syrup and bourbon and mix completely.

Sift remaining cocoa and sugar together and spread on large plate.

Shape cookie mixture into 3/4 inch balls and roll them in cocoa and sugar mixture.
