Beefy Cornbread Casserole

  yellow cornmeal

  2% milk

  low-sodium cheddar cheese -- shredded

  vegetable cooking spray


Heat oven to 350°F.

Cook meat, peppers, garlic, chili powder, cumin, and onion until meat is no longer pink and onion has softened. Drain.

In a medium bowl add cornmeal, salt, baking powder, corn, egg, oil, and milk.

Spray a 13x9 inch pan. Spread half of the cornmeal mixture.

Sprinkle one cup of cheese over cornmeal.

Layer with all of the meat mixture.

Sprinkle remaining cup of cheese.

Carefully spread remaining cornmeal mixture over the top.

Bake for 40 to 45 minutes or until a toothpick inserted in center comes out clean.

Notes: You can use a can of green chilies in place of the jalapenos.
