Heat oven to 350°F. In a large bowl mix brown sugar, sugar, bananas, butter, vanilla extract, shortening and egg together until light and fluffy. Sift flour, baking soda, cinnamon, salt and nutmeg together. Add to wet mixture and mix thoroughly. Add chocolate chips and mix well. Drop by rounded tablespoons onto ungreased cookie sheets. Bake for 15 minutes and just starting to brown. Cool 1 to 2 minutes on cookie sheet and then remove to racks. Makes 90 small cookies. |
