Heat a small dry skillet over medium and add sesame seeds. Shake frequently and cook until browned. Let seeds cool on a plate or paper towel. Heat oil in wok over high swirling to coat sides. Add garlic, ginger, and shallots. Cook for 30 seconds. Add peas and cook for about 3 to 4 minutes until bright green and crisp-tender. Mix sherry, sesame oil, and soy sauce together. Push vegetables to the side and add mixture. Heat to boiling. Stir to coast the peas with sauce. Sprinkle sesame seeds over top to serve. Makes 6 servings. |
