Asian Pork Kabobs

 pork loin -- cut into 1-inch cubes

 red onion -- cut into wedges

 red bell pepper -- cut into 1-inch squares

 crimini mushrooms -- caps

 pineapple chunks in water

 Glaze

 low sodium soy sauce

 garlic -- minced

 ginger root -- minced

 sesame oil

 teaspoon

 rice wine vinegar

 red pepper flakes

 brown sugar -- packed

 cornstarch

Heat oven to 375°F.

Mix glaze ingredients in a small saucepan and heat to boiling. Stir frequently until thickened.

On six skewers place meat, onions, red bell peppers, mushrooms, and pineapples. Place on rack over roasting pan. Brush with glaze.

Cook for 20 to 30 minutes turning and brushing with glaze frequently.

NOTES : If using bamboo skews be sure to soak them in water for at least 30 minutes. I usually use metal skewers.
