Apple Glazed Pork Roast

  unsalted butter

  apple butter

  tablespoon

  cornstarch


Heat oven to 350°F.

Melt butter in small saucepan and add shallot, garlic, and ginger. Cook until softened and starting to brown on edges.

In a small bowl mix mustard, brown sugar, soy sauce, salt, pepper, brown sugar, and apple butter. Mix well.

Add apple butter mixture to saucepan and heat until boiling.

Mix cornstarch with water to make a slurry and add to sauce. Cook stirring constantly until thick and glossy. Remove from heat.

Trim roast of fat and put on a rack over a roasting pan. Brush with 1/2 of the glaze.

Cook for 45 minutes.

Brush with remaining glaze and return to over. Cook until temperature reached 160°F.

Remove from over and tent with foil for about 10 minutes.
