Heat oven to 375°F. Cut crusts off of bread and pulse in a food processor until coarse crumbs form. Spread on a baking sheet and toast about 15 minutes. Cool completely. Dice apples and put in large bowl. Mix in lemon juice, brown sugar, vanilla, cinnamon, and nutmeg. Mix butter with bread crumbs. Mix half of bread crumbs into apple mixture. Spread apple mixture in a 2 quart baking dish. Sprinkle rest of bread crumbs over top. Cover and bake for 40 minutes. Uncover and bake for an additional 15 minutes or until top is golden brown. Notes: Use a good white bread. Use either Granny Smith or Golden Delicious apples. Makes 6 servings |
