Amish White Bread

  warm water -- 110°F

  sugar

  yeast

  bread flour or all purpose flour

  honey

  unsalted butter -- melted


In large bowl dissolve the sugar in warm water and then stir in yeast. Let the yeast proof at least 5 minutes.

Mix salt, honey, and butter into yeast and mix well.

Add flour one cup at a time until dough pulls away.

Turn out and knead until smooth and elastic. You can also knead with a stand mixer and dough hook.

Oil a bowl and place dough in it turning to oil both sides of bread. Cover and let rise until doubled about one hour.

Punch dough down and shape into loaf. Place in a well oil loaf pan. Cover and let rise until doubled or bread is at least one inch above pan.

Heat oven to 350°F. Bake for 30 minutes or until golden brown.

Cool on rack.

Notes:  If using all-purpose flour decrease the amount of water to 3/4 cup.
