Heat oven to 350°F. Melt butter in small saucepan. Add water chestnuts, mushrooms, shallot, and garlic. Cook until softened and starting to brown. In meantime soak panko in red wine. Add shallot mixture to panko along with egg, salt, pepper, tomato paste, basil, marjoram, thyme, and Worcestershire sauce. Mix thoroughly. Add beef and mix until just incorporated. Don't over mix or meatloaf will be tough. Cover a rack with foil and poke holes in it. Put on top of baking pan. Form meatloaf into a rectangle on the foil and over holes. Brush with barbecue sauce. Bake for 1 to 1 1/4 hours or until done. Notes: Use you favorite barbecue sauce. Makes 12 Servings. |
