Aloha Fish Kabobs

  red snapper -- cut into 1" cubes

  mushroom caps

  pineapple chunks in juice

  green onions -- sliced 1" thick

  red bell pepper -- cut into 1" squares

  Sauce

  tablespoons

  pineapple juice

  tablespoons

  low sodium soy sauce

  teaspoon

  Dijon mustard

  teaspoon

  ginger root -- minced fine

  tablespoon

  honey


Mix sauce ingredients together and set aside.

On skewers alternate the fish, mushrooms, pineapple, green onions, and red bell pepper. Baste with sauce on one side.

Cook over hot coals or under a broiler for about 5 minutes.

Baste and turn skewers over and cook another 4 minutes.


Notes: If using wooden skewers make sure to soak them in water for 1/2 hour.
